Banana Choco Beet Waffles
When it comes to breakfast, I will always prefer a yogurt bowl however, when I am a bit on the hunger side & wanna be fancy, my go to are waffles hands down (pancakes are chopped liver in comparison to waffles sorry not sorry) These pancakes are oh so delicious and huge bonus, toddler approved. Gluten free, dairy free, refined sugar free, and packed with loads of fibre & vitamin c.
Please note, you can taste the earthliness of the beets so if needed, add as much or as little toppings to suit your needs.
1 and 1/3 cups of unsweetened cashew milk
0.5 cup of Nutiva melted coconut oil
1.5 cups of Bob’s Red Mill teff flour
1 tsp of vanilla extract
1 and 1/4 cup of chopped roasted beets
2 tsp of baking powder
3 tbsp of maple syrup
1/4 tsp of sea salt
half of banana - sliced
1 tsp of unsweetened chocolate chips
1. In a blender, puree beets, cashew milk, eggs, maple syrup and melted coconut oil until incorporated
2. In a large bowl, stir in teff flour, baking powder and sea salt. Pour in beet mixture and mix until combined. Do not over mix
3. Grease waffle iron and place 1/3 of the mixture and cook accordingly. I like to leave mine in longer because I like a bit of a crisp on the outside.
4. Garnish with sliced bananas, chocolate chips and you are good to go
